Gomashio (also sometimes spelled "gomasio") is a traditional Japanese condiment made from sesame seeds and salt. Gomashio or "goma," meaning sesame and "shio" meaning salt is a simple yet flavourful seasoning which is commonly used in Japanese cuisine to enhance the taste of rice, vegetables, and other dishes, adding both a nutty flavour and a slight crunch.

To make gomashio, the sesame seeds are lightly toasted to bring out more of their natural nutty taste and aroma. The toasted seeds are then ground coarsely with sea salt.
