Gluten Free Brown Rice Pasta with Creamy Tofu Sauce

This multi purpose tofu sauce is excellent with crudités, thinned as a salad dressing or as a pasta sauce. Most people would not realise that it was dairy free unless told. It is simply delicious!
Serves 3
Ingredients
For creamy sauce
- 1 pack Clearspring Tofu
- 50g unsalted cashew nuts – soaked overnight and drained
- 1tbsp Clearspring Tamari Soya Sauce
- 1tbsp Clearspring Extra Virgin Olive Oil
- 1tbsp Clearspring Sweet White Miso
- 1tbsp Clearspring Toasted Sesame Oil
- sprinkling of chilli flakes
- salt and pepper to taste
For pasta dish
- 40g Bio Kitchen Organic / Demeter Garden Peas
- 160g Clearspring Gluten Free Brown Rice Pasta
- Handful broccoli florets
Method
- Whizz all the ingredients thoroughly, either in the food processor or with a stick blender, to make a creamy sauce.
- Season with salt and pepper to taste.
- Sprinkle with chilli or nori flakes to taste.
If using as a pasta sauce, cook pasta (with the broccoli florets for the last 2 mins of cooking time) - add a handful of garden peas or sweetcorn at the very end. To save on washing up cook the vegetables in the same pan as the pastas.
