Bettina's Kitchen Seaveg Crispies with Hummus & Fresh Crudites

Bettina's Kitchen Seaveg Crispies with Hummus & Fresh Crudites - Clearspring

I absolutely adore Clearspring Organic Seaveg Crispies, and they have become a staple in my pantry for several compelling reasons. Firstly, I appreciate Clearspring's commitment to authenticity and organic fine foods, making their products truly exceptional. The recent removal of plastic trays from their Seaveg Crispies is not only admirable but also environmentally conscious, contributing to a significant reduction in plastic waste.

The best part is that even without the tray, these Seaveg Crispies retain their full crispiness, thanks to just three simple ingredients: nori sea vegetables, unrefined sea salt, and sunflower oil. What truly sets them apart for me, though, are the incredible nutritional benefits of seaweed.

Seaweed is a functional food, rich in vitamins A, C, K, B vitamins, minerals like iodine, calcium, magnesium, potassium, plant-based iron, omega-3 fatty acids, antioxidants, prebiotic fibre, and chlorophyll.

Clearspring Organic Seaveg Crispies are amazing to eat as a snack straight from the packet, or I also love using them as a side, eg as an interesting addition to a bowl of hummus and fresh crudites. One of my personal favourite ways to enjoy them is by spreading some creamy hummus onto a seaweed sheet and adding a crisp carrot or cucumber stick before wrapping it all up. The combination of the nutty hummus, the crunch of the vegetables, and the umami flavour of the seaweed creates a delicious and satisfying snack that's not only tasty but also loaded with nutritional goodness. It's a quick and easy option that never fails to hit the spot!

In today's world, where deficiencies in iodine and omega-3s are prevalent, seaweed offers a convenient and delicious way to address these concerns. It's not just a snack; it's medicine in the form of a tasty treat, and I have to say that Clearspring Organic Seaveg Crispies have now earned a permanent spot in my kitchen!

Bettina's Kitchen - Bettina Campolucci Bordi

Bettina Campolucci Bordi, an acclaimed plant-based chef, is a fervent advocate for plant foods. With her Danish-Tanzanian-Bulgarian roots, she uses local and seasonal produce to create dishes that nourish the body and soul.

Bettina has carved a niche in recipe development for high-profile brands and the hospitality industry, focusing on maximizing the potential of plant foods. Her culinary talents are showcased in her three well-received cookbooks: Happy Food, 7 Day Vegan Challenge, and Celebrate. The latter book, as the name implies, is a joyous collection of plant-based recipes that everyone can enjoy.

Her passion for food can be traced back to her multicultural childhood. Bettina fondly remembers haggling for the freshest produce in Tanzania's markets and being enamoured by the culinary skills of her relatives in Bulgaria, Sweden and Norway. She's drawn from these experiences and her extensive travels to infuse her dishes with a global touch.

Beyond cookbooks, Bettina's endeavors span food and mindfulness retreats, plant-based cooking workshops, pop ups, food writing, and her widely popular Retreat Chef Academy. A consistent thread in all her work is her unwavering belief in eating seasonally, locally, and waste-free. Bettina’s mission is to dispel the misconception that plant-based eating is dull, pricey, or inconvenient. Her goal is to inspire more people to embrace a plant-rich diet and to celebrate food, life, and camaraderie.
