Vermicelli Salad with Peanut Sauce

We have created this simple and delicious recipe using Clearspring’s new Organic Vermicelli Noodles. The authentic Thai noodles are mixed in a rich and creamy peanut sauce. This refreshing noodle salad is perfect for a packed lunch or enjoyed at home as a main or side salad. You can also use the peanut sauce as a base or dip for a variety of other dishes.
Serves: 2 - Cooking time: 10 minutes
Ingredients
- 1 pack Clearspring Organic Vermicelli Noodles
- 1 small cucumber
- ½ cos lettuce - shredded
- 1 carrots
- ½ red cabbage
- Clearspring Organic Gomashio - Black Sesame with Sea Salt
- fresh mint leaves - optional
- 1 tsp Clearspring Organic Apple Cider Vinegar
- 3 tbsp Clearspring Organic Peanut Butter - Crunchy
- 1 tsp Clearspring Organic White Miso
- 1-2 tbsp Clearspring Organic Oat Syrup
- juice of one fresh lime
- 1-2 tbsp water
Method
- Cook or soak the noodles according to instructions on pack, rinse under running water and leave in a sieve.
- Add all the ingredients for the peanut sauce in a bowl or a jar and mix until there are no lumps. Add a splash of water if you’d like to change the consistency.
- Wash and chop all the vegetables into thin strips.
- Mix the noodles, chopped vegetables and the peanut sauce together in a large bowl.
- Serve with a sprinkle of Clearspring Organic Gomashio - Black or Whole Sesame Seeds.
