We have created this simple and delicious recipe usingClearspring’s new Organic Vermicelli Noodles. The authentic Thai noodles are mixed in a rich and creamy peanut sauce. This dish can be enjoyed a refreshing lunch, dinner or as a refreshing packed lunch. You can also use the peanut sauce as a base or dip for a wide variety of other dishes. 

Serves 2 I Cooking time 10 minutes

Ingredients

Peanut Sauce

    Method

    1. Cook or soak the noodles to pack instructions, rinse under running water and leave in a sieve.

    2. Add all the ingredients for the peanut sauce in a bowl or a jar and mix until there are no lumps. Add a splash of water if you'd like to change the consistency.
    3. Wash and chop up all the vegetables into thin strips.
    4. Mix the noodles, chopped vegetables and the peanut sauce together in a large bowl.
    5. Enjoy with sprinkle of Clearspring Gomashi Black or Whole sesame seeds.
