How to Use

To prepare, soak for 30 minutes in warm water, remove any hard stems, slices if desired and cook with grains or in stir-fries and soups.

For a flavourful Japanese Dashi broth, boil a few mushrooms and their soaking water with a small strip of Clearspring Kombu sea vegetable for 15 minutes. Use a a base for miso soup or season to taste with soya sauce.

Our Organic Shiitake Mushrooms (sometimes spelt shitake) are carefully grown, selected and dried to offer the full depth of flavour and aroma that is highly prized in both Eastern and Western cuisine. The variety used is characterised by large, well-developed caps, which makes them easy to reconstitute and use in everyday cooking. The word Shiitake means (shii - oak tree, take - mushroom) that have a long history of use.

To prepare Clearspring Shiitake:

  • Leave to soak for about 30 - 45 minutes in water
  • Remove any hard stems
  • Slice if desired
  • Cook with grains, stir-fries, vegetables and soups.

For a flavourful broth, boil a few shiitake and their soaking water with some kombu sea vegetable for 15 minutes, then season with shoyu or tamari and mirin to taste.

Surprisingly tasty

Just tried it for the first time, was surprised by how good it tasted. I also used Shichimi seasoning from Clearspring which gave the soup a nice kick. Big plus that it’s organic

Expensive but worth it. Have tried cheaper ones. No comparison. Use it mainly now for when I make sushi.

High quality dried organic shiitake mushrooms.

Maybe more expensive than other dried shiitake mushrooms in the market but these are good quality, organic and quite big. Real unami flavour & real food. Trust that they won't have chemicals/pesticides on them. So is worth spending a little more. Very nice & helpful staff too. Heard & read they got anti-oxidant properties and help fight cancer too. Love them
